How to Clean and Maintain a Wood Fired Pizza Oven.

A well-maintained wood fired pizza oven will reward you with exceptional cooking performance, outstanding flavour and many years of reliable service. Whether you own one of our traditional clay ovens, a masonry oven or a stainless steel model, regular cleaning is an important part of ownership.

However, a few regular maintenance habits will keep your oven looking its best and performing exactly as intended.

Clean the Oven Interior

One of the easiest ways to clean the inside of a wood fired oven is to allow the fire to burn at a high temperature for an extra 20 to 30 minutes after cooking. This burns away grease, food residue and carbon deposits, making them much easier to remove once the oven has cooled.

Never attempt a full clean while the oven is still hot. Although long-handled tools can safely move embers during cooking, thorough cleaning should always wait until the oven has cooled completely.

Once cool:

  • Scrape away any baked-on residue using a suitable oven scraper.
  • Sweep loose ash and debris from the cooking floor using a natural fibre brush.
  • Remove any remaining ash with an ash shovel or suitable vacuum designed for cold ash.

Keeping the oven floor free from ash not only improves cooking performance but also promotes better airflow and helps prevent unwanted smoke during future cooking sessions.

Cleaning the Cooking Floor

The refractory cooking floor naturally develops a seasoned appearance over time. Darkening of the stone is completely normal and does not affect cooking performance.

Clean the cooking surface whenever food has spilled or whenever residue begins to build up.

For best results:

  • Allow the cooking floor to cool naturally.
  • Gently remove burnt food using a plastic or wooden scraper.
  • Use a stiff brush with a small amount of warm water for stubborn marks.

Avoid soaking the cooking floor, as refractory materials can absorb moisture. Excess water may increase drying time and, if trapped, could contribute to cracking when the oven is heated again.

Always allow the oven to dry thoroughly before lighting another fire.

Never Use Household Cleaning Chemicals

One of the biggest mistakes owners make is using oven cleaners, detergents or chemical degreasers inside their wood fired oven.

Because refractory materials are porous, they can absorb cleaning products. These chemicals may later be released when the oven reaches cooking temperature, affecting both food quality and safety.

For almost every cleaning task, warm water, a scraper and a stiff brush are all that is required.

Removing Stubborn Stains

Occasionally, melted cheese, oils or sauces may leave stubborn marks on the cooking floor.

If brushing alone is not enough, a paste made from equal parts bicarbonate of soda and water can help lift difficult stains.

Apply the paste to the affected area, gently scrub with a brush and wipe away using a damp cloth. Repeat if necessary.

Afterwards, ensure the cooking floor is completely dry before using the oven again.

Caring for the Exterior

Different oven finishes require slightly different maintenance.

Traditional Clay and Masonry Ovens

Our traditional ovens are manufactured using natural refractory materials designed to withstand extremely high temperatures.

Over time, exposure to rain, frost and changing temperatures may cause minor hairline surface cracks in the outer render. These are generally cosmetic and form part of the natural expansion and contraction process.

If your oven has not been used for several weeks, particularly after prolonged wet weather, we recommend gradually bringing it back up to temperature with a small fire before cooking at full heat. This allows any absorbed moisture to evaporate safely.

Using a quality weather cover whenever the oven is not in use will significantly reduce maintenance and prolong the life of the external finish.

Stainless Steel Ovens

Stainless steel is durable and weather resistant but will naturally show fingerprints and light marks more readily.

To keep the exterior looking its best:

  • Wipe with a soft damp cloth.
  • Dry immediately using a clean microfibre cloth.
  • Avoid abrasive pads or harsh cleaning products that could damage the finish.

Cleaning the Chimney and Flue

The chimney plays an important role in maintaining proper airflow through your oven.

During normal use, soot and creosote gradually build up inside the flue. Left unchecked, this can reduce airflow and increase the risk of chimney fires.

For ovens used regularly, inspect the chimney every month and clean it whenever a noticeable build-up appears.

Occasional domestic users may only need to carry out this maintenance once or twice each year.
